The Art of the Pour: DIY Bar Cocktails with Ayush Arora

The turn of the decade brought with it a period of unsettlement, with the outbreak of the deadly Covid-19 wreaking havoc across global economies. While our nation struggled with the realities of life in this new world, a parallel tragedy soon reared its ugly head; the utter lack of accessibility to alcoholic beverages. While daaru thekas have seen a tumultuous revival in recent times, no amount of weekend living room indulgences can compare to a good ol’ night out on the town.

For all those boozy nights we so sorely miss, TheVibe brings you a masterclass of easy-to-make alcoholic beverages, curated by Head Mixologist and Co-owner of Hammer & Song, and Boardwalk by Flamboyante, Ayush Arora.

“The drinking culture in Mumbai is still developing- only a niche section of people truly drink to enjoy the experience, the liquor and the culture behind it.” Ayush says, “I want to encourage people to switch up their weekend LIT for a more potent, chic and spirit-forward cocktail, like a Boulevardier. Now, don’t get me wrong- I love Kingfisher, Vodka RedBulls and Black Label, but why not try something new?”

Identifying a dearth of attention on liquor culture amongst local bars and restaurants, Ayush attended a course on mixology at the European Bar School in Sydney, where he mastered the art of the pour, studying over 100 cocktail recipes from around the world.

“The one piece of advice I’d give to anyone starting out, is to invest in a good bar/cocktail kit, quick fixes are the easiest way to making a bad cocktail that doesn’t taste or look right,” Ayush warns, “Follow a recipe to start out with, and don’t be afraid to play around. The best way to learn is to make mistakes!”

°Red Wine Sangria

Ingredients:

  • Seasonal Fruits (Apples, Oranges, Cherries, Limes, Lychees etc)
  • 3 bar spoons of brown sugar
  • 1/4 bar spoon of cinnamon powder
  • 15 ml dark rum
  • 15 ml peach liqueur (or vodka with any fruity syrup)
  • 3/4 Bottle of Red Wine

  • Glass: Pitcher-
  • Ice: None
  • Method: Build, Stir, Chill

Who doesn’t love a good Sangria? Originating in Spain, this delicious fruit-based wine punch has become a global favourite, and a must-have for any gathering worth attending.

  • 3 dashes of Tobasco and Worcestershire sauce
  • 10 ml lime juice
  • 90 ml Tomato Juice
  • A pinch of pepper and salt

Particulars:

Who said hangover cures couldn’t double up as boozy delights? A favourite brunch cocktail, garnish your Bloody Mary with a stick of celery and salt the rim with a pinch of red chilli for a real bar-style delight.

  • 8-12 Mint Leaves
  • 15 ml Sugar Syrup
  • 60 ml Bacardi Carta Blanca
  • Top-up Club Soda

  • 10 ml lime juice
  • 50 ml Cranberry Juice

Ingredients:

  • 60 ml whiskey
  • 20 ml lime juice
  • 10 ml sugar syrup (Adjust the lime and sugar balance according to sourness of limes)
  • 15 ml egg white (Optional)
  • 2 dashes of bitters

Particulars:

  • Glass: Old Fashioned
  • Ice: Cubed
  • Method: Reverse Shake and Fine Strain
  • Bar Equipment: Cocktail Shakers, Peg Measure, Fine Strainer, Hawthorne Strainer

The mark of a true gentleman, the Whiskey Sour, also known as the Boston Sour is a full-bodied beverage for those who have a taste for the finer things in life. Garnish with a dehydrated orange wheel (or a regular one) for an added citrusy kick.

°Mango Gin Spritz

  • 20 ml Fresh Mango Puree
  • 15 ml Gin
  • Top-up Sparkling wine
  • Club Soda

Here’s one for all you gin lovers out there! This refreshing blend of mango and gin is the perfect answer to a hot summer afternoon spent locked away at home. Garnish with a mango cocktail stick for added flavour!

°Pisco Basil Sour

  • 60ml Pisco
  • 4-5 Basil Leaves
  • 30 ml Lime Juice
  • 15 ml sugar syrup
  • 15 ml egg white (Optional)
  • 2 dash of angostura bitters

Particulars:

  • Glass: Rocks/Coupe
  • Ice: Cubed (No Ice required if you are using a Coupe)
  • Method: Reverse Shake and Strain
  • Bar Equipment: Cocktail Shakers,Hawthorne & Fine Strainers, Peg Measure

Originating from Peru and Chile, Pisco is a type of brandy distilled from wine or fermented fruit juice. This South American spirit features in the classic Pisco Sour, a universally appreciated beverage.

Ingredients:

  • 30 ml vodka
  • 30 ml Kahlua/homemade coffee liqueur
  • 30 ml fresh espresso

Particulars:

  • Glass: Chilled Martini/Coupe Glass
  • Ice: None
  • Method: Shake and Fine Strain

Ayush’s own signature cocktail, the master-mixer incorporates his own blend of homemade coffee liqueur, garnished with coffee beans for a boozy kicker at Hammer & Song. “It’s a cocktail that was a way cooler, classier version of a vodka RedBull, so, the next time you’re at a bar, have an espresso martini instead!” he says.
